We are truly grateful to see Chef Sung Si-woo featured in MINGCHU (@mingchu.korea) on May 12, 2026. Explore the full story behind LÉGUME and Chef Sung’s journey. In the early days of LÉGUME, Chef Sung Si-woo chose to embrace the phrase “100% plant-based” over “vegan.” Rather than framing the restaurant around a specific dietary identity or emphasizing it to diners, he hoped to offer a dining experience in which anyone could approach plant-based cuisine comfortably and wholeheartedly. Perhaps for that reason, LÉGUME today welcomes a broad spectrum of audience—from dedicated vegans and diners with dietary consideration to global travelers in search of various culinary experiences. LÉGUME began in June 2017 as a modest pop-up restaurant, “LÉGUMES,” in Seorae Village. Over the past decade, it has evolved into a place where guests can gather around the same table beyond dietary boundaries. Thanks to your generous support, we are preparing to expand the restaurant in order to offer an even better dining experience to more guests. As part of our upcoming expansion, the restaurant will temporarily close from June 5, 2026. We are planning to reopen in August, and detailed information regarding the exact reopening date and reservations will be announced later through Instagram. Meet our vegetable cutlet made with Chamdureup (aralia shoots), a rare seasonal ingredient that appears only briefly each spring in Korea. The stems are wrapped in perilla leaf and fried until crisp, preserving the ingredient’s natural form and texture. We are pleased to share that Chef Sung was featured in The Korea Economic Daily on March 31. The full interview is available through the article. “We focus more on bringing out the natural character of plant-based ingredients than on trying to imitate the flavors of animal-based ones. Working exclusively with plant-based ingredients has never really felt restrictive to us. Rather, we find the process of exploring the unique flavors, textures, and character of each vegetable deeply rewarding. In November 2025, we traveled to Mumbai and Kolkata, India, for a series of vegan gala dinners. It was a great honor to present Korean plant-based cuisine in a country where vegan diet is among the most widely embraced in the world. India’s vibrant energy and rich culinary diversity offered us a huge inspiration and allowed us to broaden our perspective on plant-based cuisine. Our heartfelt thanks go to the local farmers who dedicate themselves to growing a rich variety of crops each season, and to our patrons whose thoughtful feedback continues to guide our direction and inspire us to create better dishes.
